Basic Job Function:

To provide vision, direction, and leadership in planning, communicating, administering, and financially controlling the overall operations of the Restaurant. To foster a welcoming, caring environment, with an atmosphere of anticipatory service in which members and guests feel service is of the highest standards and wherein expectations are continually exceeded and in which employee contributions are valued and respected. Uphold and ensure compliance with all company and departmental policies and procedures.

Minimum Requirements:

Minimum three (3) to five (5) years experience in management in a high volume (2+million annual revenue) upscale restaurant. Well-rounded experience in multiple Food and Beverage operations required

High School Diploma or equivalent credentials

College graduate or hospitality degree preferred

Strong knowledge of Forbes 5-star dining standards preferred

Forbes 5 -star or luxury hospitality experience preferred

Familiarization with Micros POS (point-of-sales) system

Excellent communication skills, both written and verbal

Georgia law requires that one must be over the age of 18 to dispense or serve alcoholic beverages

Must have ability to courteously present information to people in one-on-one and group situations

Proficient in Windows XP and Microsoft Office software applications such as Word, Excel and Outlook

Tasks/Responsibilities:

Oversee the day-to-day responsibilities of the Restaurant: station assignments, opening and closing side work duties, end of shift micros reports, payroll reports, etc.

Develop, direct, and operate the Restaurant with a comprehensive knowledge of service sequence with an emphasis on personalized service by using 5-Star standards and training goals as a guide

Develop, direct, and operate Lodge Wine Cellar and buyouts with a comprehensive knowledge of service sequence, tableside preparation, and an emphasis on personalized service

Operates at a Five star/Five Diamond level by providing both members and guests with unapparelled dining experiences as well as utilizing the Sea Island Hospitality and Food and Beverage basics

Maintain outstanding Food and Beverage service training and product knowledge

Respond quickly and efficiently to specific requests from the Rooms Division/Reservations Teams

Lead and direct training for staff

Work in concert with the Chef and Culinary Team to provide the highest level of culinary experience ensuring that culinary and service staff are aware of the importance of food freshness and handling, preparation, cooking, presentation, customer service, opening and closing, storage, inventory and ordering, quality, cleanliness, and health

Act as a liaison between the front and back of the house wherein a positive work environment can prosper

Orchestrate the flow and timing of the restaurant to enhance the guest service experience and streamline culinary output

Schedule and overs all bartenders, food runners, hostesses, server assistants, and servers for Colt & Alison

Control and drive all financial aspects of the Restaurant including revenue, payroll, cost of goods and controllable expenditures

Maintain a keen awareness and duly focused on the guest's arrival and departure

Maintain complete and current knowledge of departmental policies and service procedures

Maintain complete and current knowledge of dining room layout, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, prices and dress code

Maintain complete and current knowledge of, and strictly abides by, State

liquor regulation, particularly those prohibiting service to minors, intoxicated persons, and drunk driving

Keep all parts of the Food and Beverage areas clean and organized by establishing cleaning procedures and scheduled to exceed minimum standard for cleanliness established by local health board

Assign staff work to achieve maximum labor/dollar efficiency

Attend and/or lead designated daily, weekly and/or monthly meetings as stipulated by the Director of Food and Beverage

Develop seasonal promotional events for guests and members above and beyond the holiday events

Develop team member programs to retain team members

Develop a department specific purpose to create a sense of belonging

Continuously bench mark best practices from other like restaurants to deliver product and services that enhance guest and member experience.

Partner with executive chef to develop new menus, pricing and tasting

Partner with Exec. Chef to deliver budgeted food and beverage cost plans to Resort F&B Director

Learn the names and personally recognize our regular Guests and Members

To be aware of the physical condition of the Restaurant and monitor proper maintenance in conjunction and cooperation with Engineering and Housekeeping Departments, reporting all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to supervisor immediately

Assists the Director of Restaurants in the development of strategies and programs to enhance the food and beverage experience in Colt & Alison

Recommend hiring, separation and issuance of disciplinary actions as required

To guide, coach, counsel, develop, train, and inspire direct reports in a leadership role which promotes teamwork and enhances the overall service experience and maximum productivity

To support Human Resources team training efforts to drive individual and collective staff development

Works closely with the Food and Beverage team to assist in the development of their individual skill sets which will enhance their career opportunities at Sea Island

Work closely with, and support the efforts of, the Banquet and Conference Services team to facilitate if/when functions are staged

Monitor and control china, glass, silver, and linen inventories and creates and maintains par stocks at appropriate seasonally adjusted levels

Actively participate in the control and issuing process of all beverages

Assist and support Director of Restaurants in the development of strategies and programs (holiday events, buffets, beverage promotions, etc.) to enhance the Food and Beverage experience

Work in concert with the Stewarding Team to be responsible for hygiene, safety, and sanitary conditions in accordance with state and local department authorities

Record and bill orders accurately into the register system and process payments using guest/member cards in accordance with accounting procedures

Maintain a thorough knowledge of current guest services, activities, dining options, shops, local attractions, and historical information regarding Sea Island and the surrounding area to answer any questions guests may have to the best of one's ability

If applicable, complete a Guest Problem Resolutions (GPR) form on any issues (solved or unsolved issues) and follow-up on issues as needed (if computer access is not available give information to admin support)

Attends all scheduled employee meetings and brings suggestions for improvement

Willing and timely execution of other duties as delegated by leadership

Physical Requirements:

Ability to kneel, crouch, squat, climb, stand, sit, balance, reach, bend, push, pull and walk for prolonged periods

If applicable, must have the ability to work for extended time periods in an outdoor environment, including sun, heat, cold, wind, rain, and higher than normal noise levels

Ability to perform repetitive tasks with accuracy

Ability to lift, carry, pull and push up to 30 lbs intermittently throughout a shift

Ability to read, write and communicate effectively in English, both written and verbal

Maintain compliance with Company Resort Professional Image Policy
